Warm, hearty, and healthy — this one-pot stew brings bright pantry flavors together into a comforting dish that’s perfect for chilly January evenings.

Pantry Staples:
Canned chickpeas
Canned diced tomatoes
Olive oil
Optional Add-Ins:Garlic, onion, spinach or kale, oregano, salt & pepper
Instructions:
Sauté onion and garlic (if available) in olive oil.
Add chickpeas, tomatoes, and seasoning.
Simmer 10–15 minutes.
Stir in greens at end and serve warm.
