Mediterranean Chickpea & Tomato Stew

Pantry Staples:

  • Canned chickpeas

  • Canned diced tomatoes

  • Olive oil


Optional Add-Ins:Garlic, onion, spinach or kale, oregano, salt & pepper

Instructions:

  1. Sauté onion and garlic (if available) in olive oil.

  2. Add chickpeas, tomatoes, and seasoning.

  3. Simmer 10–15 minutes.

  4. Stir in greens at end and serve warm.
